A Monday Weigh In

Image Monday-Weigh-In-1024x1024.jpg

I cannot believe it’s been THREE weeks since I got myself back on track, and frankly since 2018 kicked off. So, I’m a little excited to share with you how things are going.  So far, I’ve lost -5.3 lbs.  I’m super psyched about that.  There’s NOTHING better than putting a plan in place and having it work.  In reality, we all know it’s when you follow the plan that it works well.  When you cut corners, make … [Read more...]

Sweet and Spicy Cauliflower

Image Sweet-and-Spicy-Cauliflower-1024x1024.jpg

I eat a ton of vegetables, and to hit the goals I have for 2018, I’m about to double-down on my vegetable intake to make this magic happen. Cauliflower was a trendy little veg for 2017, and I think the growers had a hay day with all of our excitement around this cruciferous vegetable.  For me, I’ve always loved cauliflower.  As a super picky child, it was one of those veggies that I would (fairly) consistently eat.  Raw, not cooked … [Read more...]

My Word for 2018: Renew

Image NTTC-Word-for-2018-Renew-1024x1024.jpg

Oh, 2017… you were a tough one.  You challenged me.  You chewed me up and spit me out in many ways.  Needless to say, I was VERY happy to flip the calendar and get this new year started. During the last few weeks of 2017, I started to think about my word for 2018.  Eager for a reboot, I wanted to find exactly the right word for the year, the word I needed to focus on to beckon the best year ever. Truth be told, I chose a main word as well … [Read more...]

Magical Sweet Potato & Sausage Quinoa Bake

Image Magical-Sweet-Potato-and-Sausage-Quinoa-Bake.jpg

I decided to add the word magical to this recipe title because I truly believe that it is. One of my employees recommended this recipe to me this week and while I usually trust her recommendations, the idea of kale, sweet potato, and quinoa just seemed a little too whole foodsy for me.  Yep, I just made whole foods an adjective.  It’s fine.  Just the same, we don’t share recipes that often on the job so I knew there had to be … [Read more...]

Jenny Craig Recipe Creation: Spinach and Chicken Enchiladas

Image Spinach-and-Chicken-Enchiladas-1024x1024.jpg

I love enchiladas.  While they’re usually loaded with cheese, I’ve given up on the cheesy, oozy version years ago, making way for veggie-licious versions. When I’m cooking, I tend to reach for whatever veggies I have on hand.  I tend to buy the same veggies weekly – – spinach, tomatoes, broccoli, cauliflower, and onions.  These staples allow me to add to just about any dish I’m making for the week.  Today, I … [Read more...]

Currently: December 2017

Image Currently-December.jpg

Another month, another year…  let’s wrap up 2017 with a Currently post! CURRENT FLIGHT PATTERNS You guys, I think I hit a record this month with all my travel.  I had 12 flights this month… and one week, I had eight legs alone!  Phew, I’m glad all this is over. CURRENT FRUIT (?) OBSESSION Warning: There are way too many indulgences listed in this currently post (more on that next week.) One of my employees sent me the … [Read more...]

Jenny Craig Recipe Creation: Loaded Greek Nachos

Image IMG_0811-1024x683.jpg

Oh, it’s great to be home after a holiday.  Getting back into the kitchen and getting back on track with my eating is always my favorite part of the homecoming.  After days of heavier than normal meals and dining out, I need a vegetable, y’all! This weekend, I’ll also say getting my Christmas tree decorated topped the list, but it competed heavily with this recipe.  I mean, look at that beautiful plate of … [Read more...]

That Time I Did Yoga at Denver International Airport

Image IMG-5787-576x1024.jpg

I’m super excited to tell you about something new I tried recently.  It’s the COMPLETE opposite of all the chaos that’s been in my world for the past few weeks.  I got to try Yoga on the Fly for the first time! Yoga on the Fly is Denver International Airport’s VERY FIRST onsite yoga studio.   It’s also the world’s FIRST private yoga studio debuting in Denver.  I first heard about it on Twitter via 5280 Magazine … [Read more...]

Korean Pork Stuffed Sweet Potatoes

Image Korean-Pork-Stuffed-Sweet-Potatoes.jpg

It’s official.  My crockpot has taken up permanent residency on my countertop.  I put it away only to bring it right back out again!  Can you relate??  It’s officially cool weather food season! I love to cook using my slow cooker because it’s so darn easy to just throw all the ingredients in the cooker and let it do all the hard work (while I’m busy working!) Did that make you as hungry as it did me?  There is something … [Read more...]

Black Pepper Popovers

Image Popover.jpg

A few weeks ago, I made fired up my crockpot with my favorite beef stew recipe.  My sister-in-law has always told me that she pairs the stew with popovers. I had my friend Melanie over to enjoy the stew, and thought I’d take a stab at making my very first popovers for her visit.  Thanks for being my guinea pig, Melanie! While traditional popovers are baked in a special popover pan, I used a muffin tin to make them and they came out great. … [Read more...]

Garlic-Oregano Carrot Rice

Image Inspiralized-Carrot-Rice.jpg

A few weeks ago, I posted this picture to instagram of a Jenny Craig meal loaded up with carrot rice, and I got all the questions! I’ve been inspiralizing for years, but this was the first time I’d ever tried to make a riced noodle.  Such a GREAT idea!  Today, I’ll share how I did it… and I highly encourage you to give them a try! I love to buy the largest carrots I can find when I plan to spiralize them.  Farmers … [Read more...]

An Evening with Good Day Chocolate and Sprouts

Image good-day-chocolate.png

I love being part of the Denver blogging community.  We live in a city full of outdoors adventures and many healthy brands have headquarters in Colorado.  I also feel very lucky that I have an opportunity to participate in the Sprouts blogger program.  Not only is Sprouts my go-to grocery store (there are TWO within 5 minutes of my house!), but the monthly Sprouts blogger events have become some of my favorites. When Sprouts shared an invitation … [Read more...]

Beefy Cabbage and Tomato Soup

Image Beefy-Cabbage-and-Tomato-Soup-833x1024.jpg

It is officially soup season.  The only thing I’ve been drawn to cook and to eat lately has been SOUP. And, despite the way it’s been looking on NTTC… I promise that this is not becoming a soup blog.  But for now… here’s another soup recipe! It’s warm comforting, and there are just ENDLESS options.  When I spotted this recipe on Pinterest, I knew I had to give it a go.  It’s reminiscent of cabbage rolls … [Read more...]

Image Game-Day-Trio.jpg

I’m wrapping up my third year of judging Jenny Craig’s Simple Inspirations recipe contest, and I’m thrilled to announce my 2017 winner! Before I do, I have to tell you that there was SO MUCH creativity this year in entries and so many new ideas shared on how to make my favorite Jenny Craig dishes and combinations that I’d never thought of. Between us friends:  When I saw the winning recipe, I knew immediately that I … [Read more...]

Jenny Craig Recipe Creation: Big Bowl Ramen

Image Big-Bowl-Ramen-1.jpg

I’ve been home for less than 24 hours from my October vacation adventures, and I’m eager to get back into my routine.  With that, I spent my day filling my fridge with beautiful veggies for the week.  I’m back out on the road, but for now… I’m just going to savor being home and cook my little heart out! Today’s recipe is really one of those “everything-but-the-kitchen-sink” dishes… but if … [Read more...]

Spiralized Beets with Chive-Balsamic Dressing

Image Spiralized-Beets-with-Balsamic-Chive-Dressing.jpg

Have I ever told you guys that I have two spiralizers?  Confession:  I do.  Additional confession:  I’m thinking about buying a third! An early adopter of spiralizing, I bought a Paderno 3-blade spiralizer way back when which I’ve used for years, and then I got a free one when I hosted a Pampered Chef party.  I thought it would be fun to try a new version that attacks the veggies at a different angle.  And, while I love them both, … [Read more...]

Pickled Grape Tomatoes

Image Pickled-Grape-Tomatoes.jpg

While we were talking about fall coming excitedly on Monday, I have to admit that I’m going to desperately miss farmer’s markets and all the fresh tomatoes that come with them. I’ve been trying to hang onto all these great produce finds by pickling them.  I’ve never been one to make pickles.  I’ve never done any type of canning.  In order to ease my way into this process, I’m starting with refrigerator … [Read more...]

Jenny Craig Recipe Creation: Taco Soup

Image JC-Taco-Soup.png

I’m guessing that there are quite a few of you out there that are just bursting with excitement for September, and mostly for all things FALL. While I don’t enjoy the pumpkin spice latte craze, I do love the fact that fall brings warm crockpot stews and soups back to the table, which is exactly what inspired today’s recipe! I love taco soup, and I knew there had to be a way for me to make one of my favorite soups while staying … [Read more...]
